Sushi à la Almtal

Recipe for 4 People

Ingredients:

  • 250 g sushi rice
  • 375 ml water
  • 1 tablespoon rice vinegar
  • ½ tablespoon sugar
  • 1 teaspoon salt
  • 6 sheets of nori
  • Almtaler organic fish fillet (char, rainbow trout) from Jagersimmerl Fishery
  • Vegetables (e.g., cucumber)
  • Wasabi

Instructions:

  1. Rinse the rice in a sieve under running water until the water runs clear. Combine the rice and water in a pot, bring to a rapid boil, then reduce the heat significantly and let the rice simmer for 10–12 minutes.
  2. Meanwhile, mix the rice vinegar with sugar and salt in a small bowl until fully dissolved. Add this vinegar solution to the cooked rice and gently fold it in using a wooden spoon. Allow the rice to cool completely and divide it into 6 equal portions.
  3. Place a sheet of nori, shiny side down, on a bamboo mat. Spread one portion of rice thinly and evenly over the nori, leaving a 1.5 cm border at one end. Add your desired fillings. Moisten the free edge of the nori sheet with a little water.
  4. Lift the front edge of the bamboo mat slightly and gently roll the nori sheet around the filling. Continue to lift the mat and roll the sushi until the roll is completely sealed.
