Winterrezept: Apfelknödel mit Hollerröster

Apple dumplings with elderberry roast

Recipe for 4 people

  • 1/2 kg tart apples (Breaburn, Elstar, etc.)
  • 50g plain flour
  • 50g of grippy flour
  • 2 egg yolks
  • 1 pkg. vanilla sugar
  • approx. 1/2 l apple juice
  • 2 l water
  • salt, lemon juice
  • 400g elder
  • 200ml water
  • 60g granulated sugar
  • 1 small apple
  • cinnamon bark
  • 6 cloves
  • 1 tablespoon vanilla pudding powder
  • 1 tablespoon butter
  • 3 tbsp. breadcrumbs
  • 1 tablespoon granulated sugar
  • 1 tablespoon butter
  • Cinnamon

Peel and core apples, cut into small cubes and immediately sprinkle with lemon juice in a bowl. Add egg yolks, vanilla sugar and a pinch of salt, mix well. Add the flour and mix well. Leave to rest for half an hour.

Bring apple juice and water to a boil in a pot. Form small dumplings from the mass with floured hands and knock into the boiling apple juice water. The dumplings must be completely covered with liquid, add water if necessary. Leave to stand for approx. 8 minutes.

For the Hollerröster, peel, core and cut the apple into thin wedges, put the berries in a pot and cover with water. Add sugar and spices ( in a spice egg, tea strainer or bag) and boil gently for about 5 minutes.

Add apples and simmer for another 5 minutes. Remove the spices. Liquefy pudding powder with a little water (about 2cl stamperl) and add to the elder, stirring constantly. Brown butter and pour into the elder, stir well.
